I currently live in Canada, this website is hosted on a vps (virtual private server) that I fully pay for. The server is run by Cloudways – based in Malta (but hosted by DigitalOcean – US based). Cloudflare is protecting this site (which is US based). Email for this domain is hosted by Runbox (based in Norway), I backup everything on my computer to Backblaze (using my own encryption key, based in the US). If you wish to a conversation that won’t be logged (or backed up) then email me and ask me for my XMPP (I also have OTR).
